Makes 6 sandwiches
Ingredients
6 brioche buns
white sesame seeds as needed
flaked onions as needed
1lb ground beef 80/20 chuck
1/2 tsp baking soda
4 slices thick-cut bacon
1 red bell pepper
1/2 white onion
4 cloves garlic
1 tbsp chili powder
2 tbsp tomato paste
1 8oz can tomato sauce
1/4 cup ketchup
1 tbsp worcestershire sauce
1 tsp paprika
1/2 tsp mustard powder
1 tsp chicken bouillon
1 tbsp brown sugar
1 tbsp butter
all-purpose flour as needed
kosher salt and cracked pepper as needed
Procedure
Prep
Mince onion, bacon, and bell pepper.
Mix together water, baking soda, and salt until dissolved. Mix together with ground beef and coat evenly. Rest for 5 min.
Preheat oven to 250F.

Cook bacon to desired doneness.
Remove bacon without removing the fat; saute onion and pepper
Once onions are translucent, add and cook beef until browned.
Now add the garlic, chili powder, and tomato paste and mix well.
Gradually add flour and continually stir to combine.
Add tomato sauce, ketchup, worcestershire sauce, paprika, mustard powder, brown sugar, chicken bouillon, salt, pepper, and the bacon bits.
Simmer for another 5 minutes to allow flavors to incorporate.
At this point, melt your butter and brush the tops of the buns with it. Dust with sesame seeds and flaked onions.
Bake buns until lightly toasted.
Assemble and enjoy!
