Ingredients
3 servings radiatori pasta
1lb italian sausage
40g fresh basil (30-40 leaves)
3oz parmesan-regiano
1/2c extra virgin olive oil
1/2c pine nuts
4 cloves garlic
1 tsp lemon juice
Garnish
extra pine nuts
extra parmesan-regiano
basil leaves
Procedure
Boil noodles in salted water until al dente.
Saute sausage with a very small amount of neutral oil until crispy and 160F internally.
Add basil, 3oz of parmesan-regiano, olive oil, 1/2 cup pine nuts, garlic, and lemon juice into a blender and blend.
Pour sauce over noodles and garnish with extra parmesan-regiano, pine nuts, and basil leaves. Place sausage on the side.
