Makes 1 pie

Ingredients

16 graham crackers
5 tbsp butter
2 squares 70% dark chocolate
dehydrated marshmallows to taste

Chocolate Pudding
2 cups milk
3 tbsp 100% cocoa powder
3 tbsp 70% cocoa powder
1/2 cup powdered sugar
2 egg yolks
2 tbsp corn starch

Whipped Cream
2 cups heavy/whipping cream
4 tbsp powdered sugar
2 tbsp vanilla pudding mix
1 tsp vanilla
1/2 tsp kosher salt
1 tsp bourbon

Procedure

Crush graham crackers, melt butter, and mix together. Add to a pie pan and distribute evenly to make the crust. Place in the freezer for 30 min.

Add all chocolate pudding ingredients except corn starch to a pot and heat on medium.

Constantly whisk while gradually adding corn starch.

Keep whisking non-stop. Once pudding begins to thicken, turn to high heat and finish. Remove and set aside to cool.

For the whipped cream, add all whipped cream ingredients to a bowl and mix with a stand mixer.

Once stiff peaks form, use a whisk to beat to desired consistency. Be careful not to over-whip.

Assemble the pie by placing the pudding in first, and garnishing with whipped cream. Use a piping bag to decorate. Crumble more graham crackers on top, grate dark chocolate, and sprinkle with marshmallows.

Place in the fridge for 1-4 hours.
