Serves 3 people
Ingredients
3 servings of noodles (I like to use shells for pesto)
40g fresh basil
4 oz parmesan-regiano
1/2 cup extra virgin olive oil
1 cup pine nuts
4 cloves garlic
1 tsp lemon juice
9 fresh mozzarella balls
Procedure
Boil noodles until al dente.
Add basil, 3oz of parmesan-regiano, olive oil, 1/2 cup pine nuts, garlic, and lemon juice into a blender and pulse blend.
Pour sauce over noodles and garnish with remaining parmesan-regiano and pine nuts. Place 3 mozarella balls on top.
