{"id":496,"date":"2024-05-15T12:43:54","date_gmt":"2024-05-15T12:43:54","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=496"},"modified":"2025-05-23T03:21:42","modified_gmt":"2025-05-23T03:21:42","slug":"rochester-garbage-plate","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/rochester-garbage-plate\/","title":{"rendered":"Rochester Garbage Plate"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<p><em>Makes 4 plates<\/em><\/p>\n\n\n\n<p>4-8 hamburger patties<br>4-8 slices American cheese<br>ketchup and mustard as needed<br>french bread and butter<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Meat Sauce<\/h5>\n\n\n\n<p>1 cup white onion<br>1lb ground beef<br>6oz tomato paste<br>\u00bc tsp ground cloves<br>\u00bc tsp cinnamon<br>\u00bc tsp allspice<br>\u00bc tsp cayenne pepper<br>\u00bc tsp ground cumin<br>\u00bc tsp paprika<br>\u00bc tsp garlic powder<br>salt and pepper as needed<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Home Fries<\/h5>\n\n\n\n<p>8 russet potatoes<br>1\/2 cup white vinegar<br>3 tbsp vegetable oil<br>1-2 Tbsp butter<br>Paprika, salt, and pepper to taste<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Mac Salad<\/h5>\n\n\n\n<p>4 servings macaroni pasta<br>1\/2 cup carrot slivers<br>2  green onions<br>2 cups parsley<br>\u00bd cup sweet chilis or red bell peppers<br>1 tsp garlic powder<br>salt and pepper as needed<br>4 heaping spoonfuls of mayonnaise<br>2 heaping spoonfuls of sour cream<br>2 tbsp Dijon mustard<\/p>\n\n\n\n<br>\n\n\n\n<h2 class=\"wp-block-heading\">Proceedure<\/h2>\n\n\n\n<h5 class=\"wp-block-heading\">Mac Salad<\/h5>\n\n\n\n<p>Boil Pasta until tender<\/p>\n\n\n\n<p>Mix all mac salad ingredients together.<\/p>\n\n\n\n<p>Refridgerate until ready.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Meat Sauce<\/h5>\n\n\n\n<p>Saute onions until soft and set aside.<\/p>\n\n\n\n<p>Cook ground beef until crispy, stirring so that it is cooked evenly.<\/p>\n\n\n\n<p>Add tomato paste and spices and mix well, then add onions<\/p>\n\n\n\n<p>Deglaze with 1 cup of water, salt and pepper to taste.<\/p>\n\n\n\n<p>Keep warm on low.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Home Fries &amp; Burgers<\/h5>\n\n\n\n<p>Peel and dice potatoes.<\/p>\n\n\n\n<p>Place potatoes, vinnegar, salt, and water in a pot and bring to a boil. Boil for 5 min.<\/p>\n\n\n\n<p>Cook burgers in cast iron, adding cheese once nearly done. Burgers should be 55F-60F.<\/p>\n\n\n\n<p>Once finished, add a bit of water to deglaze, and add a bit of butter as well.<\/p>\n\n\n\n<p>Once potatoes are done, place on a paper towel to drain.<\/p>\n\n\n\n<p>Cook potatoes in the cast iron pan without flipping to create crispiness on one side, mix to finish. <\/p>\n\n\n\n<p>Season with salt, pepper, and paprika while fresh from the pan.<\/p>\n\n\n\n<p>Arrange plate with half mac salad, half home fries, and put the burgers on top. Spoon over meat sauce, and finish with ketchup and mustard on top.
