{"id":256,"date":"2024-04-04T15:07:58","date_gmt":"2024-04-04T15:07:58","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=256"},"modified":"2025-05-23T03:19:31","modified_gmt":"2025-05-23T03:19:31","slug":"linguine-alla-marinara","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/linguine-alla-marinara\/","title":{"rendered":"Linguine Alla Marinara"},"content":{"rendered":"\n<h5 class=\"wp-block-heading\">Noodles:<\/h5>\n\n\n\n<p>all purpose flour<br>semolina flour<br>eggs<br>olive oil<br>kosher salt<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Sauce<\/h5>\n\n\n\n<p>extra virgin olive oil<br>garlic cloves<br>red pepper flakes<br>28oz can San Marzano tomatoes<br>onion powder<br>water<br>kosher salt<br>fresh basil<br>fresh oregano<br>parmesan-reggiano<br><\/p>\n\n\n\n<br>\n\n\n\n<h3 class=\"wp-block-heading\">Procedure<\/h3>\n\n\n\n<h5 class=\"wp-block-heading\">Noodles<\/h5>\n\n\n\n<p>Mix half all purpose flour and semolina flour and pour onto workspace.<\/p>\n\n\n\n<p>Make a crater from the flour and crack 2-3 eggs into the middle.<\/p>\n\n\n\n<p>Add olive oil and salt to taste.<\/p>\n\n\n\n<p>Beat the eggs, whisking in a bit of flour in each motion.<\/p>\n\n\n\n<p>Once shaggy, knead until bouncy and firm.<\/p>\n\n\n\n<p>Wrap with plastic wrap and proof for 30 min.<\/p>\n\n\n\n<p>Flour workspace and cut into 2 pieces.<\/p>\n\n\n\n<p>Roll until thin, and cut into a neat rectangle.<\/p>\n\n\n\n<p>Fold the dough 4 times gently, and well floured.<\/p>\n\n\n\n<p>Cut into linguine, making sure not to put too much pressure lest the noodles stick together.<\/p>\n\n\n\n<p>Flour once again and keep covered until ready.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Sauce<\/h5>\n\n\n\n<p>Heat olive oil in a pan and saute garlic for about a minute. Add pepper flakes and allow to cook until golden brown.<\/p>\n\n\n\n<p>Add San Marzano tomatoes, stir lightly and gently break tomatoes.
