{"id":2360,"date":"2025-12-13T01:30:05","date_gmt":"2025-12-13T01:30:05","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=2360"},"modified":"2025-12-15T04:38:31","modified_gmt":"2025-12-15T04:38:31","slug":"pesto-salsicciotto","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/pesto-salsicciotto\/","title":{"rendered":"Pesto Salsicciotto"},"content":{"rendered":"\n<p><em>Makes 3 servings<\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p>3 servings radiatori pasta<br>1lb italian sausage<br>40g fresh basil (30-40 leaves)<br>3oz parmesan-regiano<br>1\/2c extra virgin olive oil<br>1\/2c pine nuts<br>4 cloves garlic<br>1 tsp lemon juice<\/p>\n\n\n\n<p><strong>Garnish<\/strong><br>extra pine nuts<br>extra parmesan-regiano<br>basil leaves<\/p>\n\n\n\n<br>\n\n\n\n<h3 class=\"wp-block-heading\">Procedure<\/h3>\n\n\n\n<p>Boil noodles in salted water until al dente.<\/p>\n\n\n\n<p>Saute sausage with a very small amount of neutral oil until crispy and 160F internally.<\/p>\n\n\n\n<p>Add basil, 3oz of parmesan-regiano, olive oil, 1\/2 cup pine nuts, garlic, and lemon juice into a blender and blend.<\/p>\n\n\n\n<p>Pour sauce over noodles and garnish with extra parmesan-regiano, pine nuts, and basil  leaves.
