{"id":2335,"date":"2025-12-12T19:07:29","date_gmt":"2025-12-12T19:07:29","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=2335"},"modified":"2025-12-13T01:34:44","modified_gmt":"2025-12-13T01:34:44","slug":"hot-dark-chocolate","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/hot-dark-chocolate\/","title":{"rendered":"Hot Dark Chocolate"},"content":{"rendered":"\n<p><em>Makes 6 servings<\/em><\/p>\n\n\n\n<p><em>Requires: piping bag and propane torch<\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p><strong>Whipped Cream<\/strong><br>2 cups heavy cream<br>4 tbsp granulated sugar<br>2 tbsp vanilla pudding mix<br>1 tsp vanilla<br>1\/2 tsp kosher salt<br>1 tsp bourbon<\/p>\n\n\n\n<p><strong>Hot Chocolate<\/strong><br>48oz (3c) whole milk<br>24oz (1\u00bd c) heavy cream<br>24oz (1\u00bd c) evaporated milk<br>8oz 70% dark chocolate<br>4oz cadbury milk chocolate<br>1c 100% ghirardelli cocoa powder<br>1c granulated sugar<br>2 tsp ground hazelnut coffee<br>t.t. kosher salt<br>t.t. ground cinnamon<\/p>\n\n\n\n<p><strong>Garnish<\/strong><br>6 El Mexicano Chocolate Rellenitas (substitute graham crackers)<br>6 large marshmallows<\/p>\n\n\n\n<br>\n\n\n\n<h3 class=\"wp-block-heading\">Procedure<\/h3>\n\n\n\n<p><strong>Whipped Cream<\/strong><\/p>\n\n\n\n<p>Add all whipped cream ingredients to a bowl and mix with a stand mixer until thick and creamy.<\/p>\n\n\n\n<p>To not over-whip, finish off with a whisk until stiff peaks form.<\/p>\n\n\n\n<p>Place in a piping bag in the fridge to keep chilled.<\/p>\n\n\n\n<br>\n\n\n\n<p><strong>Hot Chocolate<\/strong><\/p>\n\n\n\n<p>Bring milk, heavy cream, and evaporated milk up to 190F; it should be steaming but not boiling.<\/p>\n\n\n\n<p>Chop and melt in 70% and Cadbury chocolates.
