{"id":218,"date":"2024-04-25T14:23:42","date_gmt":"2024-04-25T14:23:42","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=218"},"modified":"2025-05-23T03:10:21","modified_gmt":"2025-05-23T03:10:21","slug":"fried-rice","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/fried-rice\/","title":{"rendered":"Fried Rice"},"content":{"rendered":"\n<p><\/p>\n\n\n<h3>Ingredients<\/h3>\n<p><em>Makes 2 servings<\/em><\/p>\n<p>2 scallions<br \/>2 cups white rice<br \/>2 eggs<br \/>2 tbsp sesame oil<br \/>soy sauce as needed<br \/>kosher salt and cracked pepper as needed<br \/>1 steak, 1 chicken breast, \u00bd lb shrimp, or 1 pork chop<\/p>\n<h5>Scallion Oil<\/h5>\n<p>4 cups vegetable oil<br \/>2 anise stars<br \/>5 bay leaves<br \/>5 stems cilantro<br \/>8 scallions<br \/>2 shallots<br \/>1 white onion<br \/>1 ginger root<br \/>4 tbsp soy sauce<\/p>\n<h3>Procedure<\/h3>\n<p>Cook the rice with your method of choice, I just add it to boiling water (1 part rice 2 parts water).<\/p>\n<p>Dry brine your preferred meat with kosher salt and cracked pepper for at least 15 min.<\/p>\n<h5>Scallion Oil<a href=\"https:\/\/www.bingingwithbabish.com\/recipes\/scallion-noodles-eeaao\"><\/a><\/h5>\n<p>Preheat a wok or pan over high heat, get it hot, and add all vegetable oil.<\/p>\n<p>Reduce to medium, then add the anise, bay leaves, scallions, shallot, onion, ginger, and cilantro.<\/p>\n<p>Continue to cook until scallions turn yellow, about 20 min.<\/p>\n<p>Reduce to low and cook until brown.<\/p>\n<p>Turn off the heat and allow the oil to infuse for 5 minutes.<\/p>\n<p>Strain the vegetables from the oil and set oil aside.<\/p>\n<h5>Fried Rice<\/h5>\n<p>Chop the remaining 2 green onions.<\/p>\n<p>Whisk eggs together with salt and pepper.<\/p>\n<p>Preheat and oil a cast iron pan.
