and Pita"},"content":{"rendered":"<h3>Ingredients<\/h3>\n<p><em>Makes 6 servings<br \/>\n<\/em><\/p>\n<h5>Tzatziki Sauce<\/h5>\n<p>1 cucumber<br \/>\n2 cups full-fat Greek yogurt<br \/>\n2 tablespoons olive oil<br \/>\n1 small garlic clove<br \/>\n2 tablespoons dill<br \/>\n1 lemon (2tbsp lemon juice)<br \/>\nkosher salt as needed<\/p>\n<h5>Pita Bread<\/h5>\n<p>160ml whole milk<br \/>\n80ml water<br \/>\n4g granulated sugar<br \/>\n30g olive oil<br \/>\n9g yeast<br \/>\n320g bread flour<br \/>\n4g kosher salt<br \/>\n4g thyme<br \/>\nthyme for garnish<br \/>\nsalt as needed<br \/>\npepper as needed<br \/>\n&nbsp;<\/p>\n<h3>Procedure<\/h3>\n<h5>Pita Bread<\/h5>\n<p>Mix the sugar, yeast, olive oil, water and milk, wait for 5 min and see if yeast is alive.<\/p>\n<p>Prepare flour, salt and chopped fresh thyme in another bowl.<\/p>\n<p>Pour in yeast mixture in batches, mixing completely before the next.<\/p>\n<p>Once shaggy, knead on a well-floured surface until the window pane test is passed.<\/p>\n<p>Oil a bowl, cover, and proof for about 40 minutes, until it rises and doubles in size.<\/p>\n<p>Preheat and oil a pan on medium heat.<\/p>\n<p>Press on the dough to remove the air and divide into 6 pieces.<\/p>\n<p>Use a rolling pin to roll out each piece of dough to a circle 20 cm in diameter.<\/p>\n<p>Cook for until they puff up slightly, and there is nice browning on each side.<\/p>\n<p>Garnish with more thyme.<\/p>\n<p>For tzatziki sauce, grate cucumbers, squeeze lemon, chop dill, and extract garlic and combine all ingredients.<\/p>\n<p><span
