{"id":1026,"date":"2025-07-30T01:36:13","date_gmt":"2025-07-30T01:36:13","guid":{"rendered":"https:\/\/www.fmidnight.com\/gourmet\/?p=1026"},"modified":"2025-10-21T05:19:22","modified_gmt":"2025-10-21T05:19:22","slug":"sloppy-joes","status":"publish","type":"post","link":"https:\/\/www.fmidnight.com\/gourmet\/sloppy-joes\/","title":{"rendered":"Sloppy Joes"},"content":{"rendered":"\n<p><em>Makes 6 sandwiches<\/em><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Ingredients<\/h3>\n\n\n\n<p>1 red bell pepper<br>1\/2 white onion<br>1lb ground beef 80\/20 chuck<br>1\/2 tsp baking soda\u00a0<br>8 slices thick-cut bacon\u00a0<br>4 cloves garlic<br>1 tbsp chili powder<br>2 tbsp tomato paste<br>1 8oz can tomato sauce<br>1\/4 cup ketchup<br>1 tbsp worcestershire sauce<br>1 tsp paprika<br>1\/2 tsp mustard powder\u00a0<br>1 tsp chicken or beef bouillon\u00a0<br>1 tbsp brown sugar<br>1 tbsp butter<br>6 brioche buns<br>all-purpose flour as needed<br>t.t. white sesame seeds<br>t.t. flaked onions<br>t.t. kosher salt<br>t.t. cracked pepper<\/p>\n\n\n\n<br>\n\n\n\n<h3 class=\"wp-block-heading\">Procedure<\/h3>\n\n\n\n<p><strong>Prep<\/strong><\/p>\n\n\n\n<p>Dice onion &amp; bell pepper, and mince garlic.<\/p>\n\n\n\n<p>Mix together water, baking soda, and salt until dissolved. Mix together with ground beef and coat evenly. Rest for 5 min.<\/p>\n\n\n\n<p>Preheat oven to 250F.<\/p>\n\n\n\n<br>\n\n\n\n<p><strong>Cook<\/strong><\/p>\n\n\n\n<p>Cook bacon to desired doneness.<\/p>\n\n\n\n<p>Remove bacon grease and set aside. Deglaze with 1\/4 cup water and also set aside.<\/p>\n\n\n\n<p>Saute onions and peppers in bacon grease to taste. Add a bit of the fond water back as well.<\/p>\n\n\n\n<p>Once onions are translucent, add and cook beef until browned.<\/p>\n\n\n\n<p>Now add the garlic, chili powder, and tomato paste and mix well.<\/p>\n\n\n\n<p>Gradually add flour and continually stir to combine.<\/p>\n\n\n\n<p>Add tomato sauce, ketchup, worcestershire sauce, paprika, mustard powder, brown sugar, bouillon, salt, pepper, and bacon.&nbsp;Shred the bacon with your hands.<\/p>\n\n\n\n<p>Simmer for another 5 minutes to allow flavors to incorporate.&nbsp;<\/p>\n\n\n\n<p>At this point, melt your butter and brush the tops of the buns with it.
